French sorrel is also referred to as buckler sorrel, shield-leaf sorrel, and sometimes the culinary name “green-sauce”. The plant’s claim to fame lies in its bright, lemony-tart flavor due to its oxalic acid content. Some describe the taste as reminiscent of green apples, kiwi, or even sour green grapes. French sorrel is a hardy perennial, meaning it will return year after year. It can tolerate frost and grow in various conditions.
